Parmesan Peppers


THESE. ARE. SO. GOOD. Just make them.

Sometimes I am amazed by how something so simple, such as roasted peppers, can be transformed into something SO flavorful with a few good, fresh ingredients. But I have to admit - I wasn't too sure about this recipe (that is, until I tasted the final product). I'm not usually a fan of peppers, raw or cooked, but when roasted with garlic, parmesan and thyme, these guys develop an amazing crispy skin, and are absolutely delicious. These peppers are great for an appetizer for friends, or a side at dinnertime. Use any peppers you have on hand, but I think yellow, red or orange have more flavor than green.

I'm hooked. And I think you will be too!

Parmesan Peppers (adapted from Bon Appetit, June 2011)
Serves 4

4 bell peppers (a mix of yellow, red, and orange)
1 clove thinly sliced garlic
8 thyme sprigs
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/4 cup grated Parmesan
Juice of 1/2 lemon

Stem, core, and quarter bell peppers; place on a baking sheet. Toss with sliced garlic, thyme sprigs, and extra-virgin olive oil; season with kosher salt and freshly ground black pepper. Arrange skin side down in a single layer and roast in a 425°F oven until softened, then top with Parmesan and broil until cheese is melted and peppers are slightly charred. Squeeze the lemon juice over peppers.

  1. Very nice, I too am generally not a fan of peppers. They always have to be cooked with lots of spices (especially garlic). Sounds like we're on the same wavelength.

  5. Roasted peppers rock! I agree with you about the red, yellow, and orange peppers have the best flavor. The green ones taste bitter to me. I've also heard the green ones are not as healthy as the others, though I'm not sure why.

  6. I'll remember this dish next time I have peppers. It's easy to cook and delicious, I'm in! I'm crazy about roasted bell peppers... so sweet and yummy!
